Very easy raisin soda bread





I found this recipe on Facebook on Bok se Borvarkie braai oven page.

I have made it a few times now and it turns out really nicely.

With the addition of some spices, as suggested by a reader, it is similar to a hot cross bun loaf. Slightly sweet and spicy and all it needs is a good lashing of butter. It also makes spectacular toast for breakfast.

Ingredients 

500g self raising flour
1 slightly heaped cup of sugar
1/2 cup raisins
1/2 cup fruit cake mix
1 cup milk
1 cup water
1 beaten egg
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice

Method.

Mix all the dry ingredients together in a bowl.
Combine with the wet ingredients and mix to a smooth batter.

Pour the batter into a large greased/buttered bread tin, optionally sprinkle with sesame seeds, and bake in a 180 degree oven for 60 to 65 minutes.

Let stand in the tin for 10 minutes and then turnout on to a wire rack to cool down.
